Ingredients: Oats, Milk, Honey*, Yogurt*, Fruits*

Combine Oats and Yogurt

Add Honey and Milk

Seal with a lid, and chill in the fridge overnight

Can add fruits in the morning

Salata/Tomato Cucumber Salad(Mediterranean Dish)

Ingredients: Tomatoes, Cucumber, Parsley, Olive Oil, Lemon Juice

Dice 6 tomatoes and one cucumber into small cubes

Chop ¾ parsley

Add salt

Combine everything in one large mixing bowl

Add olive oil and lemon juice

Acai Bowl(Brazilian)

Ingredients: Acai puree, Frozen Berries, Milk/Fruit Juice, Banana, Yogurt*, Granola, Seeds, Nuts

Add fruits to small baking sheet or plate lined with parchment and put it in freezer until completely frozen

Add the milk and yogurt to a blender
-
Add frozen fruits and acai into blender

Add toppings after serving

Couscous(Moroccan Variation)

Ingredients: bell peppers, carrots, onion, zucchini, garlic, cilantro, mint, lemon, spices(turmeric, cumin, coriander), olive oil, chickpeas, almonds*, couscous, veggie broth, raisins*

Preheat the oven to 475 degrees fahrenheit, grease baking sheet

Add veggies, drizzle with oil and seasoning, roast until tender for about 15 minutes

Whisk olive oil, lemon, garlic and spices

Bring veggie broth and turmeric to a boil.

Pour veggie broth over couscous and raisins in bowl and toss

Cover and rest for 5 minutes.

Add roasted vegetables, chickpeas, almonds, cilantro, mint and lemon mixture and toss

Lentil Soup(Indian Dish)

Ingredients: 1 cup of lentil of choice, 3 cups of water, Salt, Pepper, 1 cup of mixed vegetables(tomato, potato, bell peppers, beans, coriander), ghee(if you can find it), mustard seeds, turmeric

Wash lentils, soak them for an hour in water

Cook them for 1 hour until soft

In separate pan put 1 tablespoon of ghee, teaspoon of mustard seeds over low flame

Add vegetables, garnish with salt, pepper, chili powder optional
-
Cover and cook till soft
-
Add boiled lentils, and add turmeric, cover and cook for another 20-30 minutes until mixed well

Garnish with chopped coriander
